Brussels Sprouts with Bacon, Avocado, and Lime

What a great side dish! This will something I make over and over!

-->Brussels Sprouts with Bacon, Avocado, and Lime

Ingredients:
-1lb brussels sprouts (I used about 3 cups)
-2 slices bacon (I used turkey bacon)
-1 garlic clove, minced
-juice of 1 lime
-1 avocado, sliced
-a pinch of crushed red pepper (optional)
-olive oil
-salt and pepper

Directions:
-While you are slicing your brussels, cook the bacon until crispy in a large skillet.
-Remove from pan.
-Add a little olive oil to the pan (depending on how much bacon drippings were left over), and add your shredded brussels, garlic, and crushed red pepper.
-Cook for just a few minutes on medium heat, until brussels start to get tender.
-Mix in lime juice and crumble bacon into the sprouts. s&p to taste.
-Scoot your sprouts over to the side of the pan, and add avocado slices--just to quickly warm each side. You don't really want to stir them around into the sprouts or they will mash right in. 
-When they are heated through, mix everything together and enjoy!

Banana Almond Muffins

Banana Almond Muffins
 
Ingredients:
- 1 cup almond flour

- 2 ripe bananas

- 1/2 cup egg whites

- 1 Tablespoon almond butter (I didn’t have any so I used unsalted natural peanut butter which btw is not paleo)

- 1 Tablespoon Pumpkin Spice (you could also uses cinnamon)

- 1 pinch sea salt

-(Optional: blueberries, slivered almonds, dried cranberries, etc)

Directions:
1. Mash it up! I kept the bananas a lil chunky on purpose.
2. Make sure to spray your tin with some oil so they don’t stick.
3. Bake about 15-20 min at 350F in the oven.

4. Let them cool for 10 min and then used a spatula to scoop out.

Roasted Jamaican Jerk Almonds

Roasted Jamaican Jerk Almonds

These are one of my favorite ways to roast almonds. So easy and so yummy!

Ingredients:
-Raw almonds
-Olive Oil
-Jerk seasoning (I like Pampered Chef)
-Salt (I like Himalayan pink salt)

Directions:
-Preheat oven to 200
-Lay almonds on a baking sheet
-Drizzle with olive oil and mix evenly over them
-Sprinkle salt and seasoning to your liking
-Roast for 20 minutes and enjoy!

Turkey Meat Sauce with Spaghetti Squash

Oh Yum Yum Indeed. This dish was amazing. I didn't miss the pasta at all!


Ingredients:
-1 lb Ground Turkey 
-2 Jars your favorite sauce
-2 tablespoons Fresh Basil (diced)
-2 cloves garlic (minced)
-Spaghetti squash

Directions:
-Roast squash 450 for 60 minutes
-Brown the turkey in a skillet
-In a large pot heat sauce, garlic and basil
-Add in meat and simmer for 20 minutes
-Dish out the squash and add sauce to top

Bruschetta Eggs & Chicken Breakfast Sausage

After an amazing weekend of Paleo "cheating" ;) I'm back to the grind. I made this dish for breakfast and it was so delicious! I had a side dish of greens salad on the side and some Green Tea!

Ingredients:
1. Organic Sage Chicken Breakfast Sausage
2. Organic Eggs
3. Cilantro
4. Bruschetta
5. Fresh sprouts
6. Franks Hot Sauce

Directions:
1. Cook Sausage on medium on stove
2. Mix eggs, cilantro and bruschetta together and cook.
3. Top with sprouts and hot sauce. Yum Yum!

Paleo roasted avocado with salsa and breadcrumbs

Paleo Baked Avocado with Salsa and Breadcrumbs

All I can say is Yum Yum Yum! This was such a quick and super delicious meal. I added some leftover cauliflower rice as a side and had a great wholesome dinner! 


Baked Avocado Salsa

Ingredients:

-1 ripe Avocado
-¼ cup bread crumbs*
-1 garlic clove, minced
-1 Tbsp. grated Parmesan cheese (I did not use cheese)
-1 Tbsp. basil, chopped
-1 Tbsp. lemon juice
-Salt and freshly ground pepper to taste
-¼ cups
Roasted Garlic Tomato Salsa (I used bruschetta)

Directions:

-Preheat oven to 450°F.
-In a small bowl, combine the bread crumbs, garlic, cheese, basil, lemon juice, salt and pepper; set aside.
-Cut the avocado in half and remove pit. Divide the salsa between the two avocado halves.  Top with bread crumb mixture.
-Place on a small baking sheet.
-Bake for 5-10 minutes. Serve immediately. 

 Servings 2.

Paleo Breadcrumbs


-½ cup Almond Meal or Almond Flour
-¼ cup Golden Flaxseed Meal
-1 tsp Garlic Powder*
-½ tsp Onion Powder*
-½ tsp Thyme*
-½ tsp Oregano*
-1 ¼ tsp Sea Salt*
-½ tsp Black Pepper*
-Optional: 1 Tbsp Arrowroot Powder (if you need to thicken a dish)

*You can use 4 tsps Italian Seasoning instead of these.

NOTE: You can use regular flaxseed meal if you want, but it will taste more like wheat bread.

Mix all ingredients together and use just like breadcrumbs.

Arugula Chef Salad & Cauliflower Rice with Chicken Sausage and Peppers

I am so excited to be tracking this awesome new diet with all of you. Each time I have a NEW recipe I will post! Let me know if you try these and how they were for you. The Cauliflower Rice I had for Dinner was fantastic!!! So happy I found a replacement for real rice. Maybe Thai food with Cauliflower rice soon?? Wait and See. Here is Today....


Lunch


Baby Arugula Chef Salad

Ingredients:

-Baby Arugula
-Organic Roast Beef
-Organic Salami
-Organic Turkey
-Raw mushrooms
-Carrots
-Fresh Sprouts
-Broccoli
-Dried Gogi Berries
-Walnuts
-Annie's Lemon and Chive Dressing 





Dinner

Sausage, Peppers, and Cauliflower Rice 

Ingredients:

-Organic Chicken Sausage
-Bell Peppers
-Red onion
-Siracha Sauce
-Cauliflower Rice


Cauliflower Rice Recipe:

Ingredients:



  • 1/2 of a large head of cauliflower or a full one if it’s on the small side
  • 1/2 yellow or white onion, diced
  • 2 cloves garlic, minced
  • 1/2 cup cilantro, chopped (Optional)
  • zest of one large lime
  • juice from half a lime
  • 2 TBSP coconut oil
  • S&P, to taste



Directions:


- Grate the cauliflower or use a food processor to pulse into the right texture.  (Heads up–if you use the food processor, work in batches.  If the processor is overloaded, the cauliflower won’t chop up evenly).



-Heat a large pan to medium-high and add the coconut oil. When the oil is melted, add the onions and garlic. Cook until just translucent, then add the riced cauliflower. This is one time when overcrowding a pan and creating steam works to your advantage.  For this recipe, we don’t want browned cauliflower–just gently cooked through. Give it a couple minutes… and by a couple, I mean about 5-7. 



-Add in the lime zest and fresh cilantro.



-You may also want to add a bit of salt and pepper too; season to your preference.



-Mix together in the pan (enjoy the smell!) and transfer to a serving dish. 



- Squeeze the fresh lime juice over the rice and serve.

Dessert

Paleo Vanilla Cupcakes
(Yield: 8 cupcakes)


Ingredients:
1/2 cup sitfted coconut flour
1/4 tsp. baking soda
1/4 tsp. sea salt
4 eggs
1/3 cup coconut oil or butter (melted)
1/2 cup honey
1 Tbsp. vanilla



Directions:

1. Preheat your oven to 350 degrees F.
2. Combine all the dry in ingredients in a medium bowl and mix well. (You do not need much flour, but lots of eggs to bind. FYI: The batter will thicker than traditional mix).
3. Add the wet ingredients to the dry ingredients and mix well (a hand mixer works great).
4. Divide batter among 8 cupcakes.
5. Bake for about 15-20 minutes, or until a toothpick inserted in the center of a cupcake comes out clean.
6. Cool about 20-30 minutes and then frost.

*Store in a airtight container at room temperature for a few days or in the fridge for about a week.



Chocolate Frosting:

1/2 cup butter, softened OR Coconut Oil
1/4 cup honey
2 Tbsp. cocoa



Vanilla Frosting:

1/2 cup butter, softened OR Coconut Oil
1/4 cup honey
1 tsp. vanilla

Whip together and frost!



Note: One batch of frosting was more than enough to do the 8 cupcakes.

Herb Mini Frittatas

Paleo Diet Day #1
Herb Mini Frittatas with Sauteed Arugula

(This is for 12 mini frittatas. Cut the recipe in half for only 6)

Ingredients:

-12 large eggs
-1/2 tsp salt
-1/4 tsp pepper
-3 tbsp olive oil
-1 small onion
-1 clove garlic, minced
-2 tbsp chopped fresh herbs (I used cilantro and basil)
-Add in some sauteed arugula and top with fresh sprouts (optional).


Directions:

1. Preheat oven to 350 degrees. Coat to 12-cup nonstick muffin tin with cooking spray.
2. In a large bowl, whisk eggs with salt and pepper until blended.
3. Warm oil in a small skillet over medium-high heat. Saute onion until softened but not browned, 3-5 minutes. Add garlic and saute 1 minute longer. Remove from heat and cool slightly.
4. Whisk onion mixture and herbs into eggs. Divide among the 12 muffin cups and bake until set in center. 20-30 minutes.
5. Add in sides and toppings (optional)

What is the Paleo Diet?
The Paleolithic diet consists mainly of fish, grass-fed pasture raised meats, eggs, vegetables, fruit, fungi, root, and nuts. It excludes grains, legumes, potatoes and some starchy vegetables, refined salt, refined sugar, and processed oils. It is commonly know as the "caveman" diet. Imagine what I caveman could eat and follow that.

Why do Paleo??
It is a great diet for those with any inflammatory gut issues (stomach, small intestine and large intestine).  It is also a great diet for those that are O Blood type. Journey with me on transforming my diet to help ease my gut issues. Comment and ask questions on this blog to really help all of us create the food choices that feed us, not hurt us! Try out these recipes for something new or try full Paleo to see if it works for you.

What this blog will offer??
I will post recipes that I have tried and how they made me feel. Write in a journal to see how you feel if that helps, but it is key to be aware of feelings. Side effects to look for: bloating, guilt, depression, lethargy, energy, happiness, and contentment. These can help to uncover what is going on in your body.
